Strawberry Love Cake is a rich, creamy layered dessert featuring moist strawberry cake, a cheesecake-style layer, and a fluffy strawberry-vanilla topping. Chilled until perfectly set, it is a sweet and refreshing dessert for gatherings.

Ingredients

  • 15.25 ounce box strawberry cake mix
  • Ingredients needed to make cake: water, eggs, and oil (use amounts on the back of the box you purchased)
  • 4 (8 ounce) blocks cream cheese, softened to room temperature
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups cold milk
  • 3 ounce box instant vanilla pudding mix (do not use cook and serve)
  • 3 ounce box strawberry Jell-O mix
  • 16 ounce tub whipped topping (Cool Whip)
  • Cooking spray

Instructions

  1. Preheat the oven to 350°F. Spray a 9×13-inch baking dish with cooking spray.
  2. Prepare the strawberry cake mix according to the directions on the box, using the required water, eggs, and oil. Pour the batter into the prepared baking dish.
  3. In a large bowl, beat the softened cream cheese with an electric hand mixer until smooth.
  4. Add the 4 large eggs, granulated sugar, and vanilla extract. Mix until smooth and fully combined.
  5. Spoon the cream cheese mixture evenly over the cake batter. Bake on the middle oven rack for about 1 hour, or until done. Transfer the baking dish to a wire rack and allow the cake to cool completely.
  6. Once the cake is completely cooled, pour the cold milk into a large bowl. Gradually mix in the instant vanilla pudding mix until fully incorporated, then mix in the strawberry Jell-O mix.
  7. Add half of the whipped topping and mix thoroughly. Add the remaining whipped topping and mix until completely combined with no visible streaks.
  8. Spread the strawberry topping evenly over the cooled cake. Cover with plastic wrap and refrigerate for at least 6 hours or overnight. Slice and serve chilled.
