Strawberry Rose Popsicles

Creamy strawberry rose popsicles made with coconut milk, floral rose water, and sweet strawberries, finished with milk chocolate, pistachios, and dried rose petals.

Ingredients

  • 2 cans (14 ounces) whole fat coconut milk
  • 3 tablespoons honey or agave
  • 3 cups strawberries
  • 1 teaspoon rose water
  • 3 tablespoons dried rose petals, divided
  • 6 ounces of milk chocolate
  • 1 tablespoon finely chopped pistachios

Instructions

  1. Combine coconut milk, sweetener, strawberries, rose water, and 2 tablespoons of the dried rose petals in a blender or food processor. Blend until smooth and fully combined.
  2. Pour the mixture into popsicle molds and freeze for at least 4 hours, or until completely firm.
  3. Before serving, melt the chocolate in the microwave or in a pot on the stove. Drizzle the melted chocolate over the ends of the popsicles.
  4. Immediately sprinkle with the chopped pistachios and remaining dried rose petals.
  5. Serve immediately.

Notes

  • Use agave instead of honey for a vegetarian-friendly alternative sweetener.
  • Make sure the popsicles are completely frozen before removing them from the molds and decorating.
  • Add the pistachios and rose petals immediately after drizzling with chocolate so they stick before the chocolate sets.
  • Store undecorated popsicles in the freezer until ready to serve.
