Ingredients
12 large fresh strawberries
1/2 cup mascarpone cheese, at room temperature
2 tablespoons confectioners’ sugar
1/4 teaspoon pure vanilla extract
24 mini chocolate chips, for the eyes
Instructions
Rinse the strawberries thoroughly and pat them completely dry with paper towels.
Slice off the leafy tops of the strawberries to create flat bases so they can stand upright.
Cut off the pointed tip of each strawberry, about one-third of the way down, and set the tips aside to use as Santa hats.
In a small mixing bowl, combine the mascarpone cheese, confectioners’ sugar, and vanilla extract. Stir until smooth and creamy.
Transfer the mascarpone mixture to a piping bag fitted with a small round tip, or use a resealable plastic bag with one corner snipped off.
Pipe a generous swirl of mascarpone cream onto the cut surface of each strawberry base to create Santa’s face and beard.
Place the reserved strawberry tips on top of the cream to form Santa hats.
Pipe a small dot of mascarpone cream onto the tip of each hat to create a white pom-pom.
Gently press two mini chocolate chips into the cream on each Santa to create eyes.
Arrange the Strawberry Santas on a serving platter and refrigerate until ready to serve.
Notes
Choose large, firm strawberries with pointed tips for the best Santa shapes.
Dry the strawberries thoroughly before assembling to prevent the cream from sliding off.
For a lighter filling, substitute sweetened whipped cream for the mascarpone mixture.
Use a piping bag with a small round tip for neat, decorative details.
For extra decoration, add tiny cream buttons down the front of each strawberry.
Strawberry Santas are best served the day they are assembled.
Store leftovers in an airtight container in the refrigerator for up to 24 hours. The strawberries may release moisture over time.
These festive treats are perfect for Christmas dessert boards, holiday brunches, and children’s parties.
