Ingredients
4 large orange bell peppers
1 pound ground beef
1 small onion, chopped
1 clove garlic, minced
1 cup cooked rice
1 can diced tomatoes
Tomato sauce
Worcestershire sauce
Salt, to taste
Ground black pepper, to taste
Shredded cheese
Instructions
Preheat the oven to 350°F (175°C).
Cut the tops from the orange bell peppers and remove the seeds and membranes. Carefully carve jack-o’-lantern faces into the sides of the peppers.
Cook the ground beef and onion in a skillet over medium heat until the beef is browned and the onion is tender. Add the garlic and cook briefly, then drain excess fat if necessary.
Stir the cooked rice, diced tomatoes, tomato sauce, Worcestershire sauce, salt, and black pepper into the beef mixture. Cook until heated through and well combined.
Arrange the carved peppers upright in a baking dish and spoon the beef and rice filling into each pepper.
Top the stuffed peppers with shredded cheese and replace the pepper tops if desired.
Bake until the peppers are tender and the filling is hot throughout.
Serve warm with the carved jack-o’-lantern faces visible.
Notes
Choose large, evenly shaped orange bell peppers that can stand upright in the baking dish.
Use a small sharp knife to carefully carve the jack-o’-lantern faces before filling the peppers.
Leftovers can be refrigerated in an airtight container and reheated before serving.
