A hearty stuffed pepper soup with ground beef, tender bell peppers, tomatoes, and rice in a savory tomato broth. It has all the comforting flavors of classic stuffed peppers in an easy soup.

Ingredients

  • 2 pounds ground beef
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 (29 ounce) can tomato sauce
  • 1 (29 ounce) can diced tomatoes
  • 2 cups beef broth
  • 1/4 cup packed brown sugar
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 cups cooked white rice

Instructions

  1. Place the ground beef in a large pot over medium-high heat. Cook until evenly browned, breaking it into crumbles as it cooks, then drain excess fat.
  2. Add the chopped green bell pepper and onion. Cook until the vegetables begin to soften.
  3. Stir in the tomato sauce, diced tomatoes, beef broth, brown sugar, salt, and black pepper.
  4. Bring the soup to a boil, then reduce the heat and simmer until the peppers and onion are tender and the flavors are well combined.
  5. Stir in the cooked rice and heat through before serving.

Notes

  • For a thinner soup, add extra beef broth to reach your preferred consistency.
  • Leftover cooked rice works well and can be added near the end so it does not become overly soft.
  • Store leftovers covered in the refrigerator and reheat gently on the stovetop or in the microwave.
