Ingredients
5–6 medium fresh peaches (peeled, pitted, and finely chopped)
4–5 small fresh jalapeños (seeded and finely chopped)
1 Tbsp fresh lemon zest
2 Tbsp fresh lemon juice
3 cups granulated sugar
Instructions
Peel the peaches by blanching them briefly in boiling water, then transferring them to ice water. Remove the skins, pit the peaches, and finely chop them. Seed and finely chop the jalapeños.
Add the chopped peaches, jalapeños, lemon zest, and lemon juice to a large saucepan. Cook over medium-high heat, stirring gently, until the mixture reaches a light boil.
Add the sugar and stir continuously until completely dissolved. Bring the mixture to a full rolling boil and cook for 15 to 20 minutes, stirring as needed, until thick and glossy.
Test the jam by dipping a metal spoon into the mixture. The jam is ready when it coats the back of the spoon and does not immediately drip off.
Ladle the hot jam into clean jars, leaving about 1/4 inch of space at the top. Seal, cool, and refrigerate for up to 3 weeks, or freeze for longer storage.
Notes
Removing the jalapeño seeds keeps the heat more moderate.
For a spicier jam, leave some jalapeño seeds or membranes in the mixture.
Store the finished jam in the refrigerator for up to 3 weeks.
The jam can be frozen for longer storage.
Serve with toast, crackers, cheese, or as a sweet and spicy glaze.
