Swiss Älplermagronen is a comforting alpine dish featuring tender pasta and potatoes in a creamy cheese sauce, topped with sweet caramelized onions and optional crispy bacon. Traditionally served with applesauce for a delicious sweet and savory contrast.

Ingredients

  • 8 oz bacon, chopped, or pancetta pieces (optional)
  • 1 large onion, thinly sliced
  • 1 tsp sea salt, divided
  • 8 cups whole milk
  • 4 oz heavy whipping cream
  • 12 oz short pasta (such as penne or ziti)
  • 12 oz potatoes, peeled and diced
  • ⅛ tsp freshly ground black pepper
  • Pinch freshly ground nutmeg
  • 4 oz Gruyère cheese (or Sbrinz cheese, if available), grated

Instructions

  1. If using bacon or pancetta, cook it in a large skillet until crisp. Remove with a slotted spoon and drain on a paper towel-lined plate, reserving the rendered fat in the pan.
  2. Add the sliced onion to the same skillet, sprinkle with ½ tsp salt, and cook over medium-high heat, stirring occasionally, until deeply caramelized.
  3. Meanwhile, combine the milk and heavy cream in a large pot over medium heat. Stir occasionally and bring to a gentle boil.
  4. Add the remaining ½ tsp salt, diced potatoes, and pasta. Reduce to a simmer and cook, stirring frequently, until the potatoes are tender and the pasta is al dente.
  5. Season with the black pepper and nutmeg, then stir in the grated Gruyère cheese until fully melted and creamy. Taste and adjust seasoning if needed.
  6. Remove the caramelized onions from the heat.
  7. Divide the macaroni and potatoes among 6 serving bowls.
  8. Top each serving with the caramelized onions and the crispy bacon or pancetta, if using. Serve immediately with applesauce or cinnamon apples on the side.

Notes

  • Sbrinz cheese is the traditional Swiss choice, but Gruyère is an excellent substitute.
  • Applesauce or cinnamon apples are the classic accompaniment.
  • For a vegetarian version, omit the bacon or pancetta.
  • Leftovers can be refrigerated for up to 3 days and reheated gently with a splash of milk.
