Teriyaki Chicken Sliders

These Teriyaki Chicken Sliders are loaded with tender shredded chicken, melted provolone cheese, sweet pineapple, and crunchy coleslaw on soft slider buns. Perfect for parties, game day, or an easy family dinner.

Ingredients

  • 2 lbs chicken breasts (boneless and skinless)
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 8 slices provolone cheese
  • 2 cups coleslaw mix
  • 1/4 cup pineapple juice
  • 3/4 cup coleslaw dressing
  • 1 cup teriyaki sauce
  • 12 slider buns
  • 12 pineapple rings
  • 2 tbsp butter (melted)
  • 1 tsp dried Thai basil

Instructions

  1. Pat the chicken breasts dry with paper towels and season with salt and pepper.
  2. Add the chicken breasts and chicken broth to the Instant Pot. Seal the vent and cook on manual pressure for 10 minutes.
  3. Allow the pressure to naturally release for 10 minutes, then carefully vent any remaining pressure and transfer the chicken to a large bowl.
  4. Shred the chicken using two forks or a hand mixer.
  5. Add the teriyaki sauce to the shredded chicken and stir until evenly coated.
  6. In a separate bowl, combine the coleslaw mix, coleslaw dressing, and pineapple juice. Toss well and set aside.
  7. Preheat the oven to 350 degrees F.
  8. Separate the slider buns and place the bottom halves on a baking sheet. Place the top halves on a separate baking sheet.
  9. Spread the shredded teriyaki chicken evenly over the bottom buns and top with provolone cheese slices.
  10. Mix the melted butter with the dried Thai basil and brush the mixture over the top buns.
  11. Bake both trays for 10-12 minutes, removing the top buns earlier if they brown too quickly.
  12. Top each slider with a pineapple ring and a scoop of coleslaw. Add the top buns and gently press down before serving.

Notes

  • Hawaiian rolls work especially well for these sliders.
  • You can substitute mozzarella or Swiss cheese for the provolone.
  • Store leftover chicken and coleslaw separately in the refrigerator for up to 3 days.
  • For extra flavor, lightly grill the pineapple rings before assembling the sliders.
