This tiramisu-inspired layer cake combines moist vanilla cake soaked with espresso and layered with a rich mascarpone cream cheese frosting. Finished with cocoa powder and chocolate-covered espresso beans, it delivers classic tiramisu flavors in cake form.

Ingredients

  • 2 boxes vanilla cake mix (15.25 ounce boxes)
  • 2 cups whole milk
  • 1 cup unsalted butter
  • 6 eggs
  • 1/4 cup instant espresso
  • 1 cup boiling water
  • 6 ounces mascarpone cheese
  • 16 ounces cream cheese, softened
  • 1/2 cup butter, softened
  • 6 cups powdered sugar
  • 3 teaspoons vanilla extract
  • 57 tablespoons heavy cream
  • 1/4 cup cocoa powder
  • Chocolate-covered espresso beans, for garnish

Instructions

  1. Preheat oven to 350°F and spray three 9-inch round cake pans with nonstick baking spray.
  2. In a large bowl, combine the cake mixes, milk, butter, and eggs until smooth and just combined.
  3. Divide the batter evenly among the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  4. Cool the cakes completely, then level the tops and place each layer on a cake board if desired.
  5. In a medium bowl, dissolve the instant espresso in the boiling water and transfer to a squeeze bottle or leave in the bowl.
  6. For the frosting, beat together the mascarpone cheese, cream cheese, softened butter, and vanilla extract until smooth.
  7. Add the powdered sugar gradually, mixing well after each addition. Add heavy cream as needed until the frosting reaches a spreadable consistency.
  8. Drizzle the coffee mixture over the top of each cake layer and allow it to soak in for 20-30 minutes.
  9. Spread about 1 cup of frosting over the first cake layer and repeat with the second layer.
  10. Place the final cake layer on top and frost the top and sides of the cake.
  11. Pipe decorative stars on top if desired, then sift cocoa powder over the cake and garnish with chocolate-covered espresso beans.

Notes

  • Allow the coffee mixture to fully absorb before frosting for the best tiramisu flavor.
  • Store covered in the refrigerator for up to 4 days.
  • Bring to room temperature for 20-30 minutes before serving.
