This tofu stir-fry is packed with colorful vegetables and crispy tofu, all coated in a rich and flavorful peanut sauce. It’s a satisfying and protein-rich meal that’s perfect for meal prep or a quick weeknight dinner.

Ingredients

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 2 tablespoons neutral oil (like avocado or canola)
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half-moons
  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 2 green onions, sliced
  • Sesame seeds for garnish (optional)
  • 1/3 cup creamy peanut butter
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 2 teaspoons grated fresh ginger
  • 2 cloves garlic, minced
  • Water to thin the sauce as needed

Instructions

  1. Press the tofu for at least 15 minutes, then cut it into cubes.
  2. Toss the tofu cubes with the cornstarch until evenly coated.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook the tofu for 8 to 10 minutes, turning occasionally, until crispy and golden. Remove and set aside.
  4. Add the remaining oil to the skillet and sauté the bell pepper, zucchini, broccoli, and carrots for 5 to 7 minutes until tender-crisp.
  5. Whisk together the peanut butter, soy sauce or tamari, honey or maple syrup, rice vinegar, lime juice, ginger, garlic, and enough water to create a smooth, pourable sauce.
  6. Return the tofu to the skillet, add the peanut sauce, and stir to coat everything evenly.
  7. Cook for 2 to 3 minutes until heated through and the sauce is bubbling.
  8. Garnish with green onions and sesame seeds before serving.

Notes

  • Use maple syrup instead of honey for a fully vegan version.
  • Add extra water if the peanut sauce becomes too thick.
  • Store leftovers in the refrigerator for up to 4 days.
  • Serve with steamed rice, brown rice, or noodles.
