Ingredients
1 pound fresh pineapple (peeled, cubed, and cored, about 4 cups cubed pineapple)
1/2 teaspoon vanilla bean paste (optional)
1 pinch sea salt (optional)
Instructions
Add all ingredients to a blender or food processor and process until smooth, scraping down the sides and tamping down the fruit as necessary.
Spoon the pineapple mixture into popsicle molds without filling above the fill line, as the mixture will expand when frozen. Gently tap the molds a couple of times on a hard surface to release air bubbles, then insert the sticks.
Transfer the molds to the freezer and freeze completely for about 3 to 4 hours, depending on the size of the popsicles and freezer temperature.
Once frozen, unmold the popsicles, wrap each one individually in plastic wrap, and store in the freezer.
Notes
Vanilla bean paste and sea salt are optional but can enhance the pineapple flavor.
Using 2 1/2 oz (75 ml) popsicle molds yields approximately 7 popsicles.
For easy unmolding, briefly dip the plastic bottoms of the molds in warm water before gently sliding out the popsicles.
Keep individually wrapped popsicles stored in the freezer until ready to serve.
