Vegan Greek-Style Fries

These Vegan Greek-Style Fries are crispy, herby, and loaded with Mediterranean flavor. Topped with vegan feta and fresh parsley, they make a delicious side dish or snack.

Ingredients

  • 2 lbs (907 grams) Yukon Gold potatoes
  • 4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 to 2 teaspoons paprika or smoked paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1½ teaspoons fine sea salt
  • ½ teaspoon ground black pepper
  • 100 grams (4 oz) vegan feta, crumbled
  • 1 small handful fresh flat leaf parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C). If using an air fryer, preheating is not necessary.
  2. Wash or peel the potatoes, then cut them into fries about ¼ inch thick. Soak the fries in cold water for 10 to 15 minutes while the oven preheats. Drain and dry thoroughly with a clean towel or paper towels.
  3. Place the fries in a large bowl and toss with olive oil, garlic powder, paprika, oregano, thyme, sea salt, and black pepper until evenly coated.
  4. For oven baking, spread the fries on parchment-lined baking sheets in a single layer with space between each fry. Bake for 20 minutes, flip the fries, then continue baking for another 20 minutes or until golden and crispy. Rotate trays halfway if using two trays.
  5. For air frying, cook the fries at 380°F for about 25 minutes in batches if needed, shaking halfway through cooking.
  6. Transfer the cooked fries to a serving platter and top with vegan feta and fresh parsley. Serve immediately.

Notes

  • Smoked paprika adds extra depth and smoky flavor.
  • Fresh oregano can be used instead of parsley for a more traditional Greek flavor.
  • Serve with vegan tzatziki or lemon wedges for extra brightness.
  • These fries are best enjoyed fresh and crispy straight from the oven or air fryer.
