This White Chocolate Raspberry Cheesecake features a rich, creamy white chocolate filling, a chocolate cookie crust, and beautiful swirls of sweet-tart raspberry sauce. It’s an elegant, decadent dessert perfect for holidays, celebrations, and special occasions.

Ingredients

  • 1 (10-ounce) package frozen raspberries
  • 2 tablespoons white sugar
  • 2 teaspoons cornstarch
  • 1/2 cup water
  • 1 cup white chocolate chips
  • 1/2 cup half-and-half cream
  • 3 (8-ounce) packages cream cheese, softened
  • 1/2 cup white sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups chocolate cookie crumbs
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine the raspberries, 2 tablespoons sugar, cornstarch, and water in a saucepan. Bring to a boil and continue boiling for 5 minutes, or until the sauce thickens. Strain through a mesh sieve to remove the seeds.
  3. Mix the chocolate cookie crumbs and melted butter in a medium bowl. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. Combine the white chocolate chips and half-and-half cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval, until the chocolate is melted and the mixture is smooth.
  5. In a large mixing bowl, beat the softened cream cheese and 1/2 cup sugar until smooth and creamy.
  6. Add the eggs one at a time, beating on low speed after each addition until just incorporated. Mix in the vanilla extract and melted white chocolate mixture.
  7. Pour half of the cheesecake batter over the prepared crust. Spoon 3 tablespoons of raspberry sauce over the batter. Pour the remaining cheesecake batter on top, then spoon another 3 tablespoons of raspberry sauce over the surface.
  8. Use the tip of a knife or a wooden skewer to gently swirl the raspberry sauce through the cheesecake batter, creating a marbled pattern.
  9. Bake in the preheated oven for 55 to 60 minutes, or until the filling is set around the edges and the center still has a slight jiggle.
  10. Remove the cheesecake from the oven and allow it to cool completely. Refrigerate for at least 4 hours, preferably overnight, before removing it from the springform pan.
  11. Slice and serve chilled with the remaining raspberry sauce.

Notes

  • Use room-temperature cream cheese and eggs for a smooth, lump-free cheesecake filling.
  • Avoid overmixing the batter after adding the eggs to help prevent cracks during baking.
  • Fresh raspberries can replace frozen raspberries when available.
  • For a smoother raspberry sauce, strain it through a fine-mesh sieve to remove all seeds.
  • White chocolate baking bars can be substituted for white chocolate chips. Use high-quality white chocolate for the best flavor.
  • Allow the melted white chocolate mixture to cool slightly before adding it to the cream cheese mixture.
  • For cleaner slices, dip a sharp knife in hot water and wipe it dry between cuts.
  • Store leftover cheesecake covered in the refrigerator for up to 5 days.
  • Freeze individual slices, tightly wrapped, for up to 2 months. Thaw overnight in the refrigerator before serving.
