Zucchini Muffins with Chocolate Chips

These moist zucchini muffins are warmly spiced with cinnamon and nutmeg, studded with chocolate chips, and make a delicious breakfast, snack, or dessert. They’re tender, flavorful, and a great way to use fresh zucchini.

Ingredients

  • 2 cups all-purpose flour (spooned into measuring cup and leveled off)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (1 stick) unsalted butter, melted and cooled slightly
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 medium (9-ounce) zucchini, grated (about 2 packed cups, no need to wring dry)
  • 1/2 cup plus 2 tablespoons chocolate chips
  • 2/3 cup chopped pecans or walnuts (optional)
  • Non-stick cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C) and position a rack in the center. Generously coat a 12-cup muffin pan with non-stick cooking spray.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, whisk together the melted butter and brown sugar. Add the eggs and vanilla extract, then whisk until smooth. Stir in the grated zucchini.
  4. Add the dry ingredients to the wet ingredients and stir just until combined. Fold in 1/2 cup of the chocolate chips and the chopped nuts, if using.
  5. Divide the batter evenly among the muffin cups, filling each almost to the top. Sprinkle the remaining 2 tablespoons of chocolate chips over the tops, pressing them in lightly. Bake for 20 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool the muffins in the pan for 10 minutes, then transfer them to a wire rack to cool completely or serve warm.
  7. Store leftover muffins wrapped in foil at room temperature for up to 2 days.

Notes

  • No need to squeeze excess moisture from the grated zucchini.
  • Pecans or walnuts are optional and can be omitted.
  • For best flavor and texture, enjoy the muffins the day they are baked.
  • Store at room temperature for up to 2 days in foil or an airtight container.
