These crispy baked zucchini Parmesan rounds are coated with a savory blend of Parmesan cheese and breadcrumbs, then baked until golden and crunchy. A delicious, lighter alternative to fried chips, perfect as an appetizer, snack, or side dish.

Ingredients

  • Cooking spray
  • 2 medium zucchini (about 1 pound total)
  • 1 tablespoon olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup plain dry breadcrumbs
  • 1/8 teaspoon salt
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 450°F (230°C). Coat a baking sheet with cooking spray.
  2. Slice the zucchini into 1/4-inch-thick rounds, keeping the slices as uniform as possible for even cooking.
  3. Place the zucchini rounds in a medium bowl and toss with the olive oil until lightly coated.
  4. In a small bowl, combine the grated Parmesan cheese, breadcrumbs, salt, and a few grinds of black pepper.
  5. Dip each zucchini round into the Parmesan mixture, pressing gently so the coating adheres evenly to both sides.
  6. Arrange the coated zucchini slices in a single layer on the prepared baking sheet, leaving a little space between each piece.
  7. Bake for 25 to 30 minutes, or until the zucchini rounds are tender and the coating is golden brown and crisp.
  8. Remove from the oven and serve immediately while warm and crispy.

Notes

  • Slice the zucchini evenly, approximately 1/4 inch thick, to ensure consistent baking and a crispy coating.
  • Freshly grated Parmesan cheese provides the best flavor and texture.
  • Panko breadcrumbs can replace regular breadcrumbs for a slightly crunchier coating.
  • For a gluten-free variation, use gluten-free breadcrumbs.
  • Avoid overcrowding the baking sheet, as this can cause the zucchini to steam instead of crisp.
  • Serve with marinara sauce, garlic yogurt dip, or your favorite dipping sauce.
  • These crisps are best enjoyed immediately after baking. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in an oven or air fryer to restore some crispness.
