These zucchini pizza bites are a quick, low-carb twist on classic pizza, topped with marinara, mozzarella, and pepperoni. They make a delicious appetizer, snack, or light meal.

Ingredients

  • 1.5 lb zucchini, sliced into 1/4-inch thick circles
  • 1 tbsp avocado oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 2/3 cup marinara sauce
  • 1 1/2 cups mozzarella cheese, shredded
  • 1 tsp Italian seasoning (optional)
  • 1.5 oz pepperoni slices, cut into eighths or small pieces

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Line a baking sheet with foil or parchment paper. Arrange the zucchini slices in a single layer. Brush or spray with avocado oil and season with sea salt and black pepper.
  3. Bake for about 5 minutes, until the zucchini just begins to soften.
  4. Top each zucchini slice with 1/2 to 3/4 teaspoon marinara sauce, about 1/2 tablespoon shredded mozzarella, a sprinkle of Italian seasoning if using, and 3 to 4 small pieces of pepperoni.
  5. Return to the oven and bake for 8 to 10 minutes, until the cheese is melted and the zucchini is tender.
  6. Switch the oven to broil and broil for 1 to 3 minutes, until the cheese is lightly browned. Serve warm.

Notes

  • Use parchment paper for easier cleanup.
  • Pat zucchini slices dry before baking to reduce excess moisture.
  • Customize with your favorite pizza toppings.
  • Best served immediately, but leftovers can be refrigerated for up to 3 days and reheated in the oven or air fryer.
