This 15 Minute Apple Salad is a crisp and creamy combination of sweet apples, crunchy walnuts, fresh greens, and tangy stilton cheese tossed in a flavorful yoghurt dressing. Perfect as a light lunch or refreshing side dish.

Ingredients

  • 1 small apple, sliced into thin matchsticks
  • 60g stilton, crumbled
  • 2 celery sticks, diced
  • 70g romaine lettuce, finely chopped
  • 2 tbsp sliced red onion (either pickled or fresh)
  • 3 tbsp chopped parsley
  • 40g walnuts, toasted
  • 100g greek yoghurt
  • 1 tsp dijon mustard
  • 1 garlic clove, crushed
  • 1 tsp honey
  • 1 tbsp apple cider vinegar
  • 1/2 tbsp extra virgin olive oil
  • 1/2 tsp dried chives
  • 1/4 tsp dried parsley
  • 1/21.5 tbsp water

Instructions

  1. In a large bowl, whisk together the greek yoghurt, dijon mustard, crushed garlic, honey, apple cider vinegar, olive oil, dried chives, and dried parsley. Add 1/2 to 1.5 tablespoons of water as needed to loosen the dressing.
  2. In another large bowl, combine the apple, stilton, celery, romaine lettuce, red onion, chopped parsley, and toasted walnuts.
  3. Pour the dressing over the salad ingredients and toss well until evenly coated.
  4. Serve immediately for the freshest texture and flavor.

Notes

  • Use pickled red onions for a tangier flavor.
  • Swap stilton with blue cheese or feta if preferred.
  • Toast the walnuts lightly for extra crunch and flavor.
  • For added protein, top with grilled chicken.
  • Best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 1 day.
