Cinnamon Sugar French Toast Cubes

These cinnamon sugar French toast cubes are crispy on the outside, soft and fluffy inside, and coated in a sweet cinnamon-sugar crust. Served with homemade vanilla whipped cream, they’re perfect for brunch or a fun breakfast treat.

Ingredients

  • 1 loaf brioche bread
  • 3 large eggs
  • 1/2 cup milk
  • 2 Tbsp. brown sugar
  • 2 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. freshly grated nutmeg
  • 1 Tbsp. butter
  • 5 Tbsp. melted butter
  • 3/4 cup white sugar
  • 2 Tbsp. ground cinnamon
  • 1/2 cup heavy whipping cream
  • 2 Tbsp. white sugar
  • A splash of vanilla extract

Instructions

  1. Remove the ends of the brioche loaf and cut the bread into 4 very thick slices. Trim off the crusts and cut each slice into quarters to create cubes.
  2. In a shallow dish, whisk together the eggs, milk, brown sugar, vanilla extract, cinnamon, and nutmeg until well combined.
  3. Heat a griddle or large skillet over medium heat and grease with 1 tablespoon butter.
  4. Dip each bread cube into the egg mixture for about 2 seconds per side. Place on the hot griddle and cook for 1 to 2 minutes on all sides until golden brown.
  5. In a bowl, combine the white sugar and cinnamon. Brush the cooked French toast cubes with melted butter, then roll them in the cinnamon-sugar mixture until coated.
  6. To make the whipped cream, beat the heavy whipping cream, 2 tablespoons white sugar, and vanilla extract until stiff peaks form.
  7. Pipe or spoon whipped cream onto the French toast cubes and serve immediately.

Notes

  • Brioche bread works best because of its rich, soft texture.
  • Day-old bread will absorb the custard without becoming overly soggy.
  • Serve with maple syrup, fresh berries, or extra cinnamon sugar if desired.
  • French toast cubes are best enjoyed fresh and warm.
