These soft, melt-in-your-mouth biscuits are smothered in a flavorful cowboy butter made from garlic, parsley, and a dash of spices. Ingredients

  • For the Biscuits:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup buttermilk
  • For the Cowboy Butter:
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
  • Salt and pepper, to taste

Instructions

  • Preheat the oven to 425°F (220°C) and grease a 9×9-inch baking dish.
  • In a large bowl, combine the flour, baking powder, salt, garlic powder, and onion powder. Add the cubed cold butter and use a pastry cutter or your hands to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Pour in the buttermilk and stir until just combined. Do not overmix.
  • Turn the dough out onto a lightly floured surface and gently fold it a few times to bring it together. Pat the dough into a rectangle, then cut it into 9 squares.
  • For the cowboy butter, combine melted butter, parsley, chives, garlic powder, smoked paprika, cayenne, salt, and pepper in a small bowl.
  • Pour half of the cowboy butter into the prepared baking dish, spreading it out evenly.
  • Place the biscuit squares into the dish over the butter, ensuring they’re close together.
  • Pour the remaining cowboy butter over the biscuits, making sure each biscuit gets a good amount of butter.
  • Bake for 18-20 minutes or until the biscuits are golden brown and cooked through.
  • Serve warm and enjoy!

Notes

  • For an extra savory kick, try adding grated cheese to the biscuit dough before baking.
  • You can also use regular butter in place of unsalted butter, but you may want to reduce the added salt in the recipe.
