A simple and comforting one-pot pasta dish packed with flavor, perfect for busy weeknights with minimal cleanup.

Ingredients

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 can (14 oz) diced tomatoes
  • 3 cups vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened.
  2. Add minced garlic and cook for about 1 minute until fragrant.
  3. Pour in diced tomatoes with juices, vegetable broth, dried basil, and oregano. Stir well.
  4. Add the spaghetti, ensuring it is submerged in the liquid.
  5. Bring to a boil, then reduce heat to medium-low and simmer, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
  6. Season with salt and black pepper to taste.
  7. Remove from heat and stir in grated Parmesan cheese.
  8. Garnish with fresh parsley and serve warm.
