Ingredients

  • 4 medium ripe Roma or vine-ripened tomatoes, chopped
  • 1/4 cup fresh basil leaves, thinly sliced
  • 2 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 small loaf baguette or rustic Italian bread, sliced about 1/2 inch thick

Instructions

  1. Rinse and chop the tomatoes into small pieces (about 1/2 inch) and place them in a mixing bowl.
  2. Mince the garlic and thinly slice the basil, then add both to the tomatoes.
  3. Add olive oil, balsamic vinegar (if using), salt, and black pepper. Gently toss to combine and let sit for about 10 minutes.
  4. Slice the baguette into 1/2 inch pieces. Brush lightly with olive oil and toast in a skillet or grill pan over medium heat for about 2 minutes per side until golden and crisp. Optionally, rub with a cut garlic clove.
  5. Spoon the tomato mixture onto the toasted bread slices, garnish with extra basil if desired, and serve immediately.
