This healthy berry crisp combines juicy mixed berries with a crunchy oat and nut topping sweetened naturally with maple syrup. It’s an easy, wholesome dessert that’s both satisfying and plant-based.

Ingredients

  • 3 cups frozen mixed berries (blackberries, blueberries, raspberries, and strawberries)
  • 2 tbsp cornstarch
  • 1 cup rolled oats (use certified gluten-free if needed)
  • 1/2 cup chopped walnuts
  • 1/2 cup sliced almonds
  • 1/2 cup almond flour
  • 1/2 cup maple syrup
  • 1/4 cup vegan butter, melted
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 375°F (190°C). Let the frozen berries thaw in a strainer for about 10 minutes.
  2. Add the slightly thawed berries and cornstarch to an 8-inch baking dish. Mix until the berries are evenly coated.
  3. In a large bowl, combine the oats, walnuts, almonds, almond flour, maple syrup, melted vegan butter, vanilla extract, and salt. Stir until well mixed.
  4. Spread the crisp mixture evenly over the berry mixture.
  5. Bake for 30 minutes, or until the topping is golden and the berries are bubbling.
  6. Allow to cool slightly before serving. Top with vegan ice cream if desired.

Notes

  • Fresh berries can be substituted for frozen berries.
  • Use certified gluten-free oats to make the recipe gluten-free.
  • Store leftovers covered in the refrigerator for up to 4 days.
