This healthy blueberry crisp features a juicy blueberry filling topped with a crunchy oat and nut crumble. Naturally sweetened with maple syrup, it’s a wholesome dessert that’s easy to make and full of flavor.

Ingredients

  • 4 cups blueberries (fresh or frozen)
  • 2 tbsp cornstarch
  • 1 tbsp maple syrup
  • 1 cup rolled oats (use certified gluten-free if needed)
  • 1/2 cup almond flour
  • 1/2 cup chopped walnuts
  • 1/2 cup sliced almonds (or pecans)
  • 1/2 cup maple syrup
  • 1/4 cup melted vegan butter
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Add the blueberries to a 9-inch pie dish or similar baking dish. Toss with the cornstarch and 1 tablespoon maple syrup until evenly coated.
  3. In a mixing bowl, combine the rolled oats, almond flour, chopped walnuts, sliced almonds, 1/2 cup maple syrup, melted vegan butter, vanilla extract, and salt. Stir until the mixture is crumbly and well combined.
  4. Sprinkle the crisp topping evenly over the blueberries.
  5. Bake for 30 minutes, or until the topping is golden brown and the blueberry filling is bubbling.
  6. Allow the crisp to cool for 10–15 minutes before serving.
  7. Serve as desired with vegan ice cream or coconut whipped cream.

Notes

  • Frozen blueberries can be used without thawing.
  • Use certified gluten-free oats to keep the recipe gluten free.
  • Pecans may be substituted for sliced almonds.
  • Store leftovers covered in the refrigerator for up to 4 days.
