Ingredients
8 large eggs
1/2 cup cottage cheese
1/2 cup shredded sharp cheddar cheese
3 shallots, thinly sliced
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1 tbsp chopped fresh chives
Instructions
Preheat the oven to 400°F (200°C).
Toss the sliced shallots with olive oil and spread them on a baking sheet. Roast for 20 to 25 minutes until soft and caramelized.
In a large bowl, whisk together the eggs, cottage cheese, cheddar cheese, salt, pepper, and garlic powder until well combined.
Stir the roasted shallots into the egg mixture.
Pour the mixture into a greased oven-safe skillet or baking dish.
