This high-protein roasted shallot cheddar frittata is savory, fluffy, and packed with rich caramelized shallots and sharp cheddar cheese. It makes a satisfying breakfast, brunch, or meal prep option with plenty of protein in every slice.

Ingredients

  • 8 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 3 shallots, thinly sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp chopped fresh chives

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sliced shallots with olive oil and spread them on a baking sheet. Roast for 20 to 25 minutes until soft and caramelized.
  3. In a large bowl, whisk together the eggs, cottage cheese, cheddar cheese, salt, pepper, and garlic powder until well combined.
  4. Stir the roasted shallots into the egg mixture.
  5. Pour the mixture into a greased oven-safe skillet or baking dish.
  6. Bake for 18 to 22 minutes until the frittata is set in the center and lightly golden on top.
  7. Let cool for a few minutes, then garnish with fresh chives before slicing and serving.
