Ingredients

  • 5 cups berries
  • 1/4 cup honey
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 170 degrees Fahrenheit or the lowest temperature your oven will go.
  2. Line a large 17×12-inch rimmed baking pan with parchment paper or a silicone baking mat.
  3. Rinse berries and remove stems if necessary.
  4. Add berries to a blender or food processor.
  5. Add honey and lemon juice, then blend until smooth.
  6. For a smoother texture, pour the puree through a fine mesh strainer to remove seeds.
  7. Pour the fruit puree onto the prepared baking sheet and spread evenly across the pan.
  8. Bake for 5 to 6 hours, rotating the pan halfway through, until the fruit is set and no longer sticky.
  9. Allow to cool completely. If using a silicone baking mat, gently peel the fruit leather and transfer to wax paper.
  10. Cut into long strips and roll into fruit roll-ups.
  11. Store in an airtight container for up to 2 weeks.

Notes

  • Use strawberries, raspberries, blueberries, blackberries, or a mix of berries.
  • If you prefer a tarter flavor, reduce the honey slightly.
  • Store fruit roll-ups in a cool, dry place for best texture.
  • Wax paper helps prevent the fruit leather from sticking when rolled.
