This no bake pineapple dream dessert is a creamy, tropical treat with a buttery graham cracker crust and fluffy pineapple filling. Perfect for warm weather gatherings and easy make-ahead entertaining.

Ingredients

  • 1 8-oz package cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup crushed pineapple, drained
  • 1 8-oz tub whipped topping, like Cool Whip
  • 1/2 cup granulated sugar
  • 1/2 cup melted butter
  • 20 individual graham crackers, crushed
  • 1/4 cup shredded coconut
  • 1/4 cup diced pineapple, drained

Instructions

  1. In a medium mixing bowl, beat the softened cream cheese with an electric mixer until slightly fluffy.
  2. Gradually add the powdered sugar and mix until smooth and well combined.
  3. Add the whipped topping and beat until light and fluffy.
  4. Fold in the drained crushed pineapple with a spatula and set aside.
  5. In a small bowl, combine the crushed graham crackers, granulated sugar, and melted butter until evenly mixed. Press the mixture firmly into a 9 x 9-inch baking dish to form the crust.
  6. Spoon the pineapple filling over the crust and smooth the top evenly with a spatula.
  7. Sprinkle the shredded coconut and diced pineapple over the top. Refrigerate for at least 2 hours or until firm before serving.
