Ingredients
2 ripe bananas, mashed
1/2 cup butter, softened
3/4 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup rolled oats
1/2 cup chocolate chips
Instructions
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, cream together the butter and brown sugar until light and fluffy.
Mix in the mashed bananas, egg, and vanilla extract until combined.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
Add the dry ingredients to the wet ingredients and stir until just combined.
Fold in the oats and chocolate chips.
Drop spoonfuls of dough onto the prepared baking sheet.
Bake for 10–12 minutes or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Use very ripe bananas for the best sweetness and flavor.
Chocolate chips can be replaced with chopped nuts or raisins.
