A rich and indulgent pecan pie protein fudge that combines nutty pecans, wholesome ingredients, and plant-based protein for a satisfying vegan treat.

Ingredients

  • 1 cup pecans
  • 1 cup dates, pitted
  • 1/2 cup vegan protein powder
  • 1/4 cup almond flour
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Add pecans to a food processor and pulse until finely chopped.
  2. Add dates, vegan protein powder, almond flour, almond butter, maple syrup, vanilla extract, cinnamon, and salt.
  3. Process until the mixture is combined and forms a sticky fudge-like texture.
  4. Press the mixture into a lined container and smooth the top.
