This savory keto stuffing combines seasoned keto croutons, sweet Italian sausage, and fresh herbs for a rich and comforting side dish. Perfect for holiday meals or cozy family dinners.

Ingredients

  • 8 cups unseasoned keto croutons
  • 1 pound bulk sweet Italian sausage
  • 1 stick salted butter (1/2 cup), plus extra for greasing the baking dish
  • 1 large onion, diced
  • 4 ribs celery, diced
  • 6 garlic cloves, minced
  • 3 tablespoons chopped fresh parsley, plus more for garnish
  • 1 1/2 tablespoons chopped fresh sage, plus more for garnish
  • 1 tablespoon chopped fresh rosemary
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 2 1/2 cups chicken stock
  • 1 large egg, whisked

Instructions

  1. Preheat the oven to 350°F. Grease a 9 x 13-inch baking dish with butter and place the keto croutons in a large mixing bowl.
  2. In a large skillet over medium heat, cook the sausage until browned and fully cooked. Using a slotted spoon, transfer the sausage to the bowl with the croutons, leaving the drippings in the skillet.
  3. Add the butter to the skillet. Once melted, stir in the onion, celery, garlic, parsley, sage, rosemary, salt, and pepper. Sauté for 8 to 10 minutes, until the vegetables are tender and fragrant.
  4. Transfer the cooked vegetable mixture and all drippings to the bowl with the sausage and croutons.
  5. In a small bowl, whisk together the chicken stock and egg.
  6. Pour the stock mixture over the crouton mixture and toss well until evenly coated and the liquid is absorbed.
  7. Transfer the stuffing mixture to the prepared baking dish and bake for 60 minutes, or until golden brown and crispy on top and heated through.
  8. Garnish with additional fresh parsley and sage before serving.

Notes

  • Use homemade or store-bought keto croutons for best texture.
  • You can substitute turkey sausage for a lighter flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat covered in the oven at 325°F until warmed through.
