A hearty and comforting white turkey chili made with lean ground turkey, beans, and warm spices. Perfect for a cozy meal that is both flavorful and lighter than traditional chili.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (4 oz) can diced green chiles
  • 2 (15 oz) cans white beans, drained and rinsed
  • 3 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground turkey and cook until browned, breaking it apart as it cooks.
  3. Add chopped onion and cook until softened, about 5 minutes.
  4. Stir in garlic and cook for 1 minute until fragrant.
  5. Add green chiles, white beans, chicken broth, cumin, oregano, chili powder, salt, and pepper.
  6. Bring to a simmer and cook for 20–25 minutes, stirring occasionally.
  7. Stir in sour cream until fully combined and heated through.
  8. Taste and adjust seasoning as needed.
  9. Serve warm, topped with shredded cheese and fresh cilantro if desired.

Notes

  • You can substitute Greek yogurt for sour cream for a lighter option.
  • Add a squeeze of lime juice before serving for extra brightness.
  • This chili thickens as it sits; add more broth when reheating if needed.
  • Store leftovers in the refrigerator for up to 3 days or freeze for longer storage.
