Ingredients

  • 4 cups mixed greens
  • 2 roasted beets, sliced
  • 1 orange, peeled and segmented
  • 1/2 pomegranate, seeds removed
  • 1 avocado, sliced
  • 1/4 cup walnuts, toasted
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Arrange the mixed greens on a large serving platter or salad bowl.
  2. Top with roasted beet slices, orange segments, pomegranate seeds, avocado, walnuts, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper.
