Zucchini Tots Recipe

Crispy on the outside and tender inside, these zucchini tots are a delicious, veggie-packed snack or side dish. Perfectly seasoned and baked to golden perfection, they pair great with your favorite dipping sauce.

Ingredients

  • 2 cups zucchini (grated, about 2 zucchinis)
  • 1 large egg
  • ½ cup shredded cheddar cheese
  • ½ cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon onion powder
  • Salt and pepper (to taste)
  • Ketchup (for serving)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Place the grated zucchini into a kitchen towel and squeeze out all excess liquid. Discard the liquid, leaving about 1 cup of packed zucchini.
  3. Transfer the zucchini to a medium bowl. Add the egg, cheddar cheese, panko breadcrumbs, Italian seasoning, and onion powder. Season with salt and pepper, then mix until the mixture holds together.
  4. Scoop about 1 tablespoon of the mixture and shape into small oval tots. You should have about 16 pieces.
  5. Arrange the tots on the prepared baking sheet and bake for 25–30 minutes, flipping halfway through, until golden brown.
  6. Serve warm with ketchup or your favorite dipping sauce.

Notes

  • Be sure to squeeze out as much liquid as possible from the zucchini to prevent soggy tots.
  • Swap cheddar with mozzarella or Parmesan for a different flavor.
  • Store leftovers in the refrigerator for up to 3 days and reheat in the oven for best texture.
  • Serve with ranch, aioli, or marinara as alternative dips.
